OMG! This is one of the best things I’ve ever made! It’s full of healthy food, but you’d never know it! It’s so tasty!!!
Single-Serving Chocolate Peanut Butter Protein Lava Cake with a Chocolate Superfood Frosting

Ingredients
- 1 Tbs plus 2 tsp cacao powder
- 3 Tbs PB2
- 1/8 tsp salt
- 1 scoop protein powder (optional, but you may need less liquid if you don't use it)
- 1-2 Tbs stevia in the raw (you can use sugar if you want)
- 1/4 tsp baking powder
- 1/2 Tbs coconut oil
- 1 egg
- 3 Tbs almond milk
- 1/2 tsp vanilla extract
Instructions
- Combine dry ingredients and mix very well. Add liquid, stir, then transfer to a little dish, ramekin, or coffee mug. If you don’t want to eat it directly from the dish make sure to spray it with cooking spray. Microwave for 60 seconds (make sure it doesn’t spill over the top of your dish! It’s gonna expand!) Top with chocolate peanut butter, coconut oil, or what I did: I mixed 1/4 scoop chocolate Shakeology with 1-2 Tbs almond milk and used that as an ‘icing’, then topped with shredded coconut.
