I thought this idea was weird when I first heard about it. Eggs IN oatmeal? It’s seriously good–I swear! If you love french toast and you love oatmeal–you’re going to love this french toast protein oatmeal. The great thing about this recipe is that is DOUBLES the size of your oatmeal–so you get to eat a TON more of it–for not that many calories. Plus, the protein in the egg whites will help keep you fuller, longer!
- 1/2 cup old fashioned oats
- 1 cup water
- 1/2 cup liquid egg whites (about 3 egg whites--or 1 whole egg)
- 1/4 tsp salt (or to taste)
- 1/4 tsp cinnamon (or to taste)
- stevia, sugar, honey, or maple syrup to taste
- Spray a non stick pan over medium heat
- Add oats, salt and water
- Let cook until the oats start to boil
- Turn heat to medium low
- Add egg whites and stir constantly with a fork
- When oats are nice and puffy and to your desired consistency, remove from heat and add cinnamon and stevia
- Feel free to add fruit, nuts, nut butter, whatever you want to this. I love it with peanut butter and banana!

Yes, it sounds weird, but it is so delicious and filling! I make something similar to this most mornings. I make it at work, so I do it in the microwave. You just need to really stir it up before you microwave it or else you will get chunks of egg in it instead of a homogeneous oatmeal. I also make it with soy milk in place of the water and it turns out well.
